Avocado Strawberry Smoothie

This refreshing smoothie has layers of sweet avocado milk, cold creamy milk and tangy strawberry puree. The recipe was inspired by the popular strawberry matcha latte and the Lebanese strawberry avocado smoothie!

Ingredients

Avocado Milk

Strawberry Mixture

  • 1 cup (120g) fresh or frozen strawberries defrosted if needed, chopped
  • 1 tablespoon (20g) maple syrup or liquid sweetener of choice, to taste (note 2)

To Serve

  • 1 cup (250g) dairy-free milk
  • ice as needed
  • chopped avocado and chopped strawberries (to decorate, optional)

Instructions

  • Make the avocado milk: Add the avocado, milk and condensed milk to a blender or food processor. Blend until well combined and smooth. Set aside.
  • Make the strawberry mixture: In two tall glasses, add the strawberries. Use a muddler to mash the strawberries well. Alternatively, you can mash the strawberries in a bowl with a fork, or puree them with a blender/food processor, then add them to the glasses.
  • Assemble: Fill 1/2 to 3/4 of the glasses with ice. Slowly pour the milk on top. Top with the avocado mixture. Decorate with chopped avocado and fresh strawberries, if desired.

Notes

  1. Instead of sweetened condensed milk, you can use 1-2 tablespoons (20-40g) of any liquid sweetener or a granulated sweetener. The flavour profile will be slightly different.
  2. You can use any granulated sugar, but the granules will take at least a few minutes to dissolve.
