One of my favourite snacks during the week are zuchinni fritters. They are just the right size for snacking, really tasty, light yet filling and umami (Japanese word for ‘pleasant savoury taste’)!!!
I’ve tried a million different recipe combinations but they always seemed to fall apart, lack zucchini or simply tasteless.
I was glad to come across this particular recipe from Plant Based on a Budget which was spot on – moist, tasty, healthy and easy!
I didn’t use sesame seeds and used chickpea/oat flour instead of rice flour and LSA/ground chia instead of flaxmeal. It still worked and I’m sure you can make other substitutes. The LSA/ground chia is like an egg-replacer and helps everything stick together! If your mixture is particularly dry, add more LSA or ground chia/flax and let it sit as this will allow the seeds to form a gel which will make all of the other ingredients stick together. Enjoy!
