It’s been so fun since I decided to open up a mini cake business in Canberra. I loved spending time designing cakes, researching cake designs and getting my hands dirty. I love talking with potential customers about their dream cakes and reading the Facebook and Instagram comments about my cakes.
Some people (or my inn every day. I’m slowly learning to believe that I deserve happiness and doing something that I love. The rest will hopefully fall into place, and if not, I’ll sensibly figure things out.
I’ve been incredibly humbled and moved by the amount of support I’ve received everywhere. I honestly can’t express how grateful I am for everyone xoxoxoxoxo.
Now, let’s talk about the elephant in the room. The.cake. I designed this raw vegan Golden Gaytime cake for a girl’s 17th birthday this week. For those who don’t know, the Golden Gaytime is a classic Aussie ice cream which was a fav of mine before I went vegan. The base of the cake is crunchy chocolate caramel and the cheesecake layers are vanilla bean, cacao and golden caramel. The cake is then topped with a chocolate caramel ‘icing’, homemade chocolate, date tahini caramel and dehydrated cookie crumbs.
I was stoked when she requested the Golden Gaytime cake, as honestly, it’s my favourite flavour (so far) in my mini cake business. She said that purple was one of her favourite colours – I became so ridiculously excited as I love seeing purple things in nature. Making this cake was a dream come true.
I was so so humbled to have the opportunity to make this cake. It was 100% cruelty free and organic where possible… which meant that the cake is a step towards a better world! Haha… I hope you know what I mean.
While I won’t give out the recipe of this special cake (sorryyyy!), I can tell you that it was inspired by my previous gaytime icecream recipe.
